Method:-
- Peel the pineapple and remove the core. Then cut the fruit into ½ cm(1/4 Inch) thick slices and reserve. Separate the eggs and beat the egg whites with the salt until stiff peaks form. Cover the container and put it into the refrigerator until the egg whites are needed. Put the vegetable oil in a saucepan and heat it to 180*c (350*f). Meanwhile, mix the flour, sugar, egg yolks. The milk and the rum, until a smooth batter is obtained. Fold in the egg whites careful
- Dip the pineapple slices in the batter and sprinkle them with coconut flakes.
- Lower the heat. Fry the pineapple fritters at 160*c (325*f) until they are golden brown. Then drain them well on kitchen paper, sprinkle them with the remaining coconut flakes and serve.
