Capsicum Rice


Capsicum Rice


 Ingredients
For Powder
1.       Urad dal - 2 tsp
2.       Jeera - 1 tsp
3.       Sesame seeds - 1 ½ tsp
4.       peanuts - 4 tsp
5.       Dry Red Chilies - 10- 20
6.       Grated dry coconut - 2 tsp
7.       Pepper ¼ tsp
8.       Fenugreek - 10 grains
For Seasoning
1.       Butter -  4 tsp
2.       Mustard seeds - ¼ tsp
3.       Jeera - ¼ tsp
4.       Turmeric Powder
      5.     Asafetida a pinch

      6. Capsicum - 4 big ( cut into little bit bigger pieces)
7.       Salt - to taste
8.       Jaggery - a bit ( Optional - 1/8 tsp)
9.       Curry leaves - 5- 10
10.   Grated fresh coconut - 2 tsp
11.   Coriander leaves and cashew nuts  ( Roasted in Ghee ) for garnishing
12.   Boiled rice
Method
1.       Dry roast all the ingredients separately in low flame which are mentioned for powder. let it cool then grind all to a coarse powder. Keep it aside.

      2.       Take a heavy bottomed pan add butter to it when butter  
             melts add mustard seeds, jeera, curry leaves  and          
             Asafetida a  pinch
          
3.       Add capsicum to above fry the capsicum for 3 - 5 min in low flame  then  add turmeric and fry for  a min then add 3 - 4 Spoon of the powder (From Step 1 , you can add more powder if you want  it to be spicy ) , salt and bit jaggery  and leave it on low flame for 2 - 3 min . and switch off the flame

4.       Add boiled rice as required to the above and mix well.  Garnish with coriander and cashews. Serve hot .
